TURKEY MOLE CHILI
INGREDIENTS
3 each Guajillo Chiles (seeded and stemmed)
3 each Pasilla Chiles (seeded and stemmed)
1/4 tsp groun Cloves
1/2 tsp Black Pepper
1/2 tsp Mexican Oregano
3 each Bay Leaves
2 Tbsp Peanut Butter
2 Tbsp Tahini
1/4 cup Raisins
1/4 cup Tamarind
4 each Garlic Cloves (crushed)
1 12oz can Tomato Sauce
2 each Corn Totillas (toasted or charred)
1 each Onion (diced)
3 Tbsp Soybean Oil
2 lbs GROUND TURKEY
1 Tbsp Salt
2 each Poblano Chilis (diced)
2 pucks Abuelita Chocolate (chopped)
32 oz Turkey stock
2 15oz can Black Beans (drained and rinsed)
1 15oz can Nopales (drained and rinsed)
DIRECTIONS
In a bowl add your dried chiles and cover with warm water and soak for about 30 minutes.
After your chiles are soft, add them to a blender along with your spices, peanut butter, tahini, raisins, tamarind, garlic, tomato sauce, and tortillas then blend until smooth.
In a heavy bottom pot, heat your soybean oil and brown your ground turkey in 1/4Ib batches. Remove the browned turkey and set it aside.
In the same pot that you just used add your diced onions and poblanos and saute until soft.
Once the veggies are soft, add the pepper sauce from the blender and bring to a simmer. Add your browned turkey, Abuelita chocolate, and stock then bring to a simmer once again.
Once simmering add your beans and nopales, and simmer for another 30 minutes. Enjoy!
