TURKEY KOFTA

 
 

INGREDIENTS 

Turkey Prep:

  • 1.5 lbs Ground Turkey

  • 1/2 Onion, grated

  • 1 Clove Garlic, minced

  • 1/4 Cup Fresh Parsley, chopped

  • 2 Tbsp Fresh Mint, chopped

  • 1 Tbsp Cumin

  • 1 tsp Paprika

  • 1/2 tsp Turmeric

  • 1 Tbsp Salt

  • 1/2 tsp Pepper

  • 1/2 tsp Chili Flakes

  • 1 each Egg

  • 1/2 Cup Bread Crumbs

Turkish Yogurt Dip

  • 1 Cup Greek Yogurt

  • 2 Cloves Garlic, minced

  • 1 Tbsp Fresh Mint, chopped

  • 1 tsp Salt

  • 1 Tbsp Olive Oil

  • Juice of 1/2 Lemon

DIRECTIONS

  1. In a large bowl, combine ground turkey, grated onion, minced garlic, chopped parsley, chopped mint, cumin, paprika, turmeric, salt, black pepper, chili flakes, egg, and bread crumbs. Mix well until the mixture begins to emulsify.

  2. In a small bowl, combine yogurt, minced garlic, chopped mint, salt, olive oil, and lemon juice. Set aside in refrigerator.

  3. Using your hands, form small patties with turkey mixture.

  4. Heat olive oil in shallow sauté pan. Sear both sides of turkey patties until the center reaches an internal temperature of 160°F.

  5. Plate and serve. Enjoy with the fresh mint yogurt sauce.
