TURKEY WITH PUMPKIN SPICE MARINADE
This turkey with pumpkin spice marinade dish will be the talk of the table, given it's incredible and diverse flavors.
INGREDIENTS
2 boneless turkey breast halves, 2½ to 3 lb. each
2 bone-in turkey legs, about 1 1/2 lb. each
2 bone-in turkey thighs, about 12 oz. each
8 cloves of garlic, peeled and smashed
1 can of pumpkin puree
⅓ cup Extra Virgin Olive Oil
¼ cup apple cider
2 tbsp White Wine Vinegar
¼ tsp ground cloves
1 tsp smoked paprika
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp cayenne pepper
1 tbsp fresh chopped sage
salt and freshly ground black pepper
½ cup turkey or chicken stock
DIRECTIONS
1 Place all the ingredients, except for the turkey and sage in a large bowl and mix with a whisk to combine.
2 Rinse the turkey with cold water and season them with salt and pepper.
3 Place the turkey on a platter and brush evenly with the marinade. Reserve the remaining marinade.
4 Cover with plastic wrap and refrigerate for at least 1 hour. Can be left overnight.
5 Preheat your oven to 425°F. Oil a large, rimmed baking sheet or roasting pan.
6 Place breast halves, legs and thighs skin side up on sheet. Drizzle with olive oil and season well with salt and pepper.
7 Roast in the oven until lightly browned, about 30 minutes.
8 Meanwhile, add the ½ chicken or turkey stock to the remaining marinade and whisk.
9 Roast the turkey an additional 30-40 minutes, basting often with the marinade, until a meat thermometer reads 160°F (in thickest part of breast).
10 Remove from oven tent with foil. Let stand for 10 minutes before carving.

PUMKIN SPICE TURKEY CHILI
Nothing better in the fall than a bowl of turkey chili! Experience the true essence of fall when you combine pumpkin spice with turkey chili.
INGREDIENTS
Chili blend
1 tablespoon ancho chile powder
1 tablespoon chipotle powder
1 tablespoon cumin, ground
1 tablespoon garlic granules
1 tablespoon mustard, yellow ground
1 tablespoon onion granules
1 tablespoon smoked paprika
Chili
2 stalks celery, diced
1 carrot, diced
1 yellow onion, diced
1 red bell pepper, diced
1 poblano pepper, diced
4 cloves garlic, minced
3 lbs ground turkey
1 tablespoon Pumpkin Spice
3 tablespoons tomato paste
2 cups chicken stock
1 can diced tomatoes
1 large can crushed tomatoes
2 cans beans of your choosing (used pinto and black)
DIRECTIONS
1. In a large pot or dutch oven, add all veggies, spices and turkey. Cook until turkey is fully cooked. Appx 10 minutes.
2. Add in Pumpkin Spice Blend and tomato paste and cook 1 minute.
3. Add stock, beans, and tomatoes, simmer on low 1 hour. If using a dutch oven, cover and cook in oven at 325℉ for 1 hour.
4. Let sit for at least 10 minutes before serving. Top with sour cream, shredded cheddar cheese, and sliced green onions.
