FRESH TOMATO SALSA
INGREDIENTS
4 vine-ripened tomatoes
2 limes, juiced
1 small red onion, diced
1 jalapeño, seeded
½ c cilantro
1 tbsp kosher salt
1 tsp freshly cracked black pepper
DIRECTIONS
1. Remove the tops and stems of each tomato and gently squeeze out the juice and seeds. Cut the seeded tomato into pieces. Place the tomato pieces into a food processor and pulse 5-7 times until you reach a chunky consistency. Pieces should resemble small dice. Pour the processed tomatoes into a medium bowl.
2. Cut the red onion and jalapeño into large chunks. Return the food processor bowl to its base and add the red onion, jalapeno, and cilantro. Pulse the food processor 5-7 times until the ingredient are cut into fine pieces. Scoop the processed veggies into the bowl of tomatoes and stir until combined.
3. Add lime juice, salt, and pepper, to the tomato mixture and stir until well blended.
4. Serve chilled or at room temperature with tortilla chips.
